Friday Favorites: My Favorite Back-to-school Busy Night Meals

This week I got to see the familiar postings of little people returning to and starting their first day of school.  It is always such a joy to see parents posting and to see how proud they are of the same.  We've been in school two weeks now and are getting used to the school pace of classes, homework, practices, and rehearsals.  It was easy to forget just how busy our week can be as a family.  That's why I am sharing some of my favorite meals for busy nights.  I've collected these from various bloggers, pinners, and experiments across the board.  The ones listed are my go-to meals when we're running low on time, but need something filling for fuel.

Crockpot Pepper Steak.  This quick and yummy meal makes it into Fall rotation quite frequently during the school year.  As a matter of fact, we had it Monday night before Bug's soccer practice.  It only takes five hours in the slow cooker, though I've been known to let mine go an extra hour to thicken the gravy.  I got this recipe from Eating on a Dime and have tried it several times.  It never disappoints.  While the recipe doesn't specifically call for it, I have seared the meat on occasion before putting it in the crock pot for a more robust flavor.  BUT, I have also made it as listed (as we did Monday) and it's still a very tasty dish.  Hope you like this one!

Oven Baked Meatball Subs.  Guys, this one should come as no surprise.  I've had this one on the site several times.  It's a staple during Fall and Football seasons.  My children devour these with gusto and my husband loves his with shredded lettuce.  This originally comes from Home Cooking Memories.  Since being introduced to this recipe, I've modified it quite a few times to make it my own.  Most of the time I cheat with frozen Italian meatballs or boost a custom sauce that I like to make on longer days.  I also put mozzarella or provolone on the split bun and broil it for a couple of minutes before loading it with meatballs so that the meatballs don't cause the bread to get soggy.  It takes me all of 15-20 minutes from start to finish with this meal.  It's filling and works great on sports practice nights.



Sheet Pan Shrimp Fajitas.  Those who know me know that I'm not much of a chicken eater.  I do, however, love shrimp and seafood in general.  This twenty minute meal is a favorite and comes up several times especially when we are running behind.  This meal originally came from Number 2 Pencil.  You can do steak, chicken, shrimp...whatever.  I love this meal and I highly recommend it when you're on a tight schedule.
